Marano di Valpolicella is a hilly area at 300 m above sea level with limestone and clay soil.
Vine age: 15-30 years
Vinification:
Hand harvesting. Controlled fermentation in stainless steel vats. Young Valpolicella ('ripasso') is pumped onto the fermentation lees after the Amarone has been racked, which adds richness and density. Ageing: 18 months in oak barrels.
Tasting notes:
Colour: intense ruby red, almost garnet in colour.
Nose: very complex, juicy red fruit aromas, enriched by woody and spicy notes (tobacco and black pepper).
Taste: full-bodied, persistent, elegant and velvety with subtle fruity notes.
Food pairing: roasts, grilled red meats, game, black truffles, medium-bodied cheeses.
Ideal serving temperature: 14-16 °C
