The grapes of our De Chanceny cuvée; vintage, carefully hand-selected, come from selected chalky, foamy soils with shale bedrock. The soil is located around the villages of Montreuil Bellay and Brossay in the south of Saumur. Thanks to the fine blend made up of these three varieties and careful ageing in our chalk and tuff tunnels, the wine exudes freshness and finesse.
Grape varieties : Chenin blanc, Chardonnay, Cabernet franc.
Hand-picked. Gentle pressing followed by cold fermentation (18°C) to preserve the aromas. Secondary fermentation takes place in bottles, following the 'traditional method' and after selecting the best grape juices. The bottles are stored for 18 to 24 months on slats in our tufa cellars before being deglazed. This produces an incomparable bubbly finesse.
Pale yellow colour. Fine and persistent bubbles. Freshness and finesse. Temperamental attack with a wrapped structure developing in the finesse. Lovely aromatic persistence in the mouth with notes of fresh fruit (pear, peach).
Enjoy chilled (8-10°C), as an aperitif or as a companion to any indulgence (Swiss gruyère cheese, curried prawns, rhubarb tart, . . . )
