CASABLANCA VALLEY
An area located between the Coastal Mountains and the Pacific Ocean. It has a unique microclimate with a cool sea breeze that
extends the ripening period of the grapes. The result is a perfect balance of sugars and acidity. The Casablanca Valley region is recognised as a Chilean
premium quality wine region with a cool climate.

Variety: 100% Sauvignon Blanc
Harvesting.
Origin: Casablanca Valley
Vinification
Whole clusters of grapes are pressed. Before bottling, the must is left to ferment
to cool for 24 hours. This is followed by fermentation for 18 days and
low temperature (between 12°C and 15°C) in stainless steel tanks. Before bottling
the resulting wine is left on the lees for 2 days. The batch is then
blended. The blend is left on the fine lees for 4,5 months.
It is pressed 3 times to obtain a suspension. This gives the wine
more volume. The wine is then decanted, cold stabilised, and before
filtered before bottling.
Aroma: Very complex. Covers a wide range of aromas: citrus, floral
(especially citrus blossom), fruits such as passion fruit and mango, and
notes of herbs.
Taste: Tropical fruit and citrus, hints of herbs. Excellent structure,
refreshing acidity, with a long and crisp finish.
Alcohol: 12,5%.
