VINIFICATIONS
This rosé sparkling wine made from Grenache, a traditional Provençal variety, is vinified according to very strict specifications (determination of the ideal harvest date, vinification at low temperature, specific yeasts).
The method used, known as Charmat, is a second fermentation method that transforms still wine in the tank into sparkling wine.
This process was invented by Jean Eugène CHARMAT at the University of Montpellier in 1907 and was developed because it allowed producers to increase production while maintaining a high level of quality.
Once fermentation is complete, the sparkling wine is filtered and then pumped into tirage tanks where it is stored until bottling.
This special production process allows the original aroma of the base wines to be preserved.
