Harvested by hand. Maceration lasted 15 days with a grid system that allows a gentle and slow infusion of the grapes, which gradually give the juice its colour and structure. After pressing, the juice was aged in concrete vats for 7 months at low temperature to best preserve the natural fruitiness of the dragon fruit. A natural malolactic fermentation was carried out. They were not glued and underwent very light filtration.
Tasting notes:
Colour: Purple robe, with purple highlights.
Nose: Clean and expressive, with notes of white flowers and crushed strawberries then peppery and peony notes are added, characteristics of our terroir
Mouth: rich attack, with expressive aromas mixed with black cherry and some fresh blackberry. The finish, slightly tannic, offers good persistence of fruit
Operating temperature: 12 to 15°
Food match: Grilled red meat, white meat
