Geographical situation : The grapes of our "De Chanceny"; vintage, carefully hand-picked, come from a selection of chalk, tuffeau and schist soils, located around the communes of Montreuil Bellay and Brossay, in the south of Saumur. The subtle blend of the three grape varieties that make it up, combined with careful ageing in our chalk tufa galleries, gives it freshness and finesse.
Grape varieties : Chenin blanc, Chardonnay, Cabernet franc.
Wine making process : Manual picking, gentle pressing and fermentation at a cool temperature (18°C) to preserve the aromas. Second fermentation in bottle according to the Traditional Method after selection of the best juices. The 18 to 24 months minimum of storage on slats in our tuffeau cellars before disgorging provide an incomparable bubble finesse.
Tasting : Pale yellow colour. Fine persistent bubbles. Freshness and finesse. Lively attack with an enveloped structure evolving in finesse. Beautiful aromatic persistence in the mouth with notes of fresh fruit (pear, peach).
Food pairing: To be enjoyed chilled (8-10°C) as an aperitif and to accompany any moment of pleasure (Swiss gruyère, shrimps in curry, rhubarb tart.
