Marano di Valpolicella, hilly area on 300 m/sea level, limestone and clay soil.
Vine age: 15/30 years
Farming system: Umbrella-shaped arbor.
Yield per hectar: total 100 qli/ha, of which 60 on selection
Vinification:
Manual harvesting, from the middle to the end of September. It is a meticulous selection of the best grapes only. The grapes are left in wood boxes for minimum 90 days to have drying process. The grapes are destemmed and pressed between the end of December to the end of January. The fermentation is controlled ad we make some delastage in stainless steel tanks. The wine is aged into oak barrels of 25 or 38 hl for 3 years.
Tasting notes:
Color: very deep red ruby color, almost garnet.
Aroma: spiced and ethereal perfumes, very complex: it opens slowly with an interesting evolution of scents from cherry spirits to spices with notes of dried fruits, like cherries.
Taste: Full body and velvety taste. The mouthfeel very complex aromas, a strong and persistent wine, but also enveloping like silk.
Food pairings: Excellent paired with game, roast and seasoned cheese, but also typical meditation wine.
Ideal serving temperature: 16 - 18° C into big glasses.
