Terroir : On primary area schists and sandstones, the three hills on steep slopes, at an altitude of 250m, are planted in contour lines. This is to avoid natural erosion. With an average age of 55 years, the Languedoc grape varieties are fully expressed. On the 12 hectares, all exposures are present, bringing more complexity and aromas.
Vinification: As soon as the grapes are ripe, they are harvested by hand. Destemming and vatting in respect of the grapes. Cold maceration then start of fermentation with temperature control.
Succession of pumping down and shed according to the tastings. Maceration according to the desired balance. Maturing of the separate grape varieties and blending after winter.
Tasting :
• Appearence : Pretty deep purple red.
• Nose : Powerful nose with spices, warm garrigue, eucalyptus and arbutus blossom.
• Palate : The palate is full, gourmet, small black fruits such as blackberry combine with spicy notes.
The finish is long, with tannins present in the finesse and elegance.
Food Pairing :
This wine would be perfect with roasted meats but also with aged cheeses.
