Manual harvesting with sorting of the bunches to keep only the most beautiful grapes. Fermentation begins naturally thanks to indigenious yeasts.
Tasting notes :
The dress is of medium intensity. The nose is open with aromas of liquorice typical of Nuits Saint Georges. On the palate there are fruity notes, perfect maturity, supported by a slight acidity and typical tannins from Nuits. The finish is almost saline, stony.
