Monthélie would deserve to be discovered as the land is very well exposed. Wine is a real Burgundy value.
Land is same geology origin as Meursault, Volnay and Pommard.
Full desteeming and hand sorting out. Traditional tank maceration for 25 days at 12°C. Fermentation for 4
days to get full extraction of Pinot noir. Some footing on every vat.
Natural alcoholic fermentation (no yeast added) . Wine taken into barrels by gravity filling.
New oak: 30% one racking only
Aging for 18 months.
Bottling with light filtration.
Beautiful heavy red colour, for pleasant red and black tiny fruits flavors, with some peppermint and under
forest notes. Soft tannins for a well balanced wine. Classic Burgundy
Best served other duck and any grilled red meats.
