The fields are cultivated traditionnaly. Our Ventoux is made with a selection of old vines – Syrah5% - Grenache 95% (all over 70 years old). Mechanical harvest. Each cuvee is vinified on its own and blending of the wines is made after tank fermentation. – full de stemming.
Maceration at 20° for 10 days.
Sulfites are added at time of bottling.
Bottling is made by a company specialized in bottling with bottles washed prior to bottling.
Light filtration on “terres blanches”. After bottling, we keep bottles upright for 5 minutes to make sure cork is carefully placed in bottle. Then bottles are layed down in stainless racks (containing 600 bottles). They will stay in these boxes until labelling time. Labelling is carried with a machine, at slow speed.

TASTING: On the nose wine is rich with lots of expression. Blackcurrant, rapsberry, soft spices
On the palate, no agressivity, but soft texture. Pleasant long finish on blackcurrant notes VENTOUX probably the best Rhone value today. Perfect as Pre diner drink and over any type of Provence Food Serve over Game, Lamb and any soft cheeses
