Malpaso is a red wine from Méntrida made by Bodegas Canopy, a young producer adept in non-interventionist organic farming, which allows wines with great expression to be grown on silicon-granitic soils.
The climate of this region is extreme and continental, characterized by long and cold winters, somewhat tempered by the Sierra de Gredos, which acts as a natural barrier against the cold north and west winds. Summers are hot and rainfall impromptu. The great seasonal variation in temperature is perfect for the ripening of the grapes. This wine is a varietal Syrah (100%) from 10 hectares of 15-year-old vines. The vines are planted on trellises and sandy soils of granite origin. In terms of processing, a cold maceration is carried out once the grapes are destemmed. Subsequently, the wine is subjected to fermentation inside its container for 15 days. Finally, Malpaso spends 8 months in French oak barrels of 500 liters, 50% new and 50% used by a single wine.
